Dried out strawberries
- In a shaker, mix the mezcal with thelemon juice and the ginger.
- Remove the ginger slices from the shaker and add the strawberry jam and the egg white.
- Shake frantically until you obtain a light and creamy foam.
- Fill the shaker with ice cubes and shake again to keep the mixture cool.
- Strain into a glass and garnish with strawberries previously crushed.
- Enjoy with lightness.
